Daddy always said they were good eating, back when he was young and there wasn't roadkill around for them to get into. He said they would feed the ones they caught with cornbread and butter milk for about 6 weeks, then bake them in the oven.
I've ate BBQ coon myself, back before the rabies got out of control around here. They are pretty good eating.
