A July 2017 article from Buzzfeed.com, the hallmark of all popular wisdom of our time, was entitled, “15 Things You’ll Understand If You’ve Ever Eaten At A White Friend’s House.”[i] In the article, a series of snarky memes and illustrative pictures were meant to communicate the idea that “white people” don’t know anything about “spicing up” their food. In other words, food made in the houses of Caucasians is bland. This is an extremely common stereotype, probably best exemplified in recent memory by the “thanksgivingwithwhitefamilies” hashtag that was trending all throughout last year’s Thanksgiving season. There’s no doubt that the 2017 Thanksgiving season will see similar viral phenomena castigating perceived Caucasian culinary fare.

DeleteBrock, Actually most stuff these days is fried in vegetable oil which is a poly unsaturated fat that breaks down into more harmful substances than more-stable- in-heat animal fat like lard. Over the last few decades, I research into nutritional health and it appears that cooking in lard (pork fat) is more healthful and less conducive to weight gain than vegetable oils. Otherwise, it's the carbohydrates (sugar, high fructose carbs) that the body stores as fat which is a greater cause of weight gain. --Ron W

DeleteEastern North Carolina here and we use vinegar based sauce. We did stop in SC at one of Maurice's restaurants after a Sam Davis Youth Camp and got a bottle that I haven't opened.

Yes, re: weight gain, if you look at weight loss diets like the Atkins, it emphasizes protein and fats with low glycemic vegetables. As far as health, cooking in saturated fats like pork lard or beef fat is better because those fats don't break down in the heat. The best fats are mono-saturated like extra virgin olive oil, avocado (guacamole), some nuts like Brazil of Macadamia, and then fish oils. Also grass-fed beef is a good fat. You mentioned "vinegar based sauce". Vinegar, especially the non-filtered organic apple cider vinegar (ACV) is very healthy and reportedly AIDS in weight loss.
DeleteI don't have a link, but just from my extensive research over the last several decades. People scoff and laugh, yet go to doctors and take their drugs. I take no drugs. I'd rather be healthy because it's fun and being sick and weak ain't no fun!! But hey, that's just me. :-)

Most of Southern cuisine fits perfectly into my food pyramid. Meat, potatoes, salt, grease, alcohol and tobacco..........
